Apples
Our family has been growing apples for over 40 years. The quality of our raw material is the basis of our ciders, and we’re now in transition to organic certification.
In addition to growing traditional varieties for our use, we’re preparing to plant cider apple trees by the spring of 2021. We’re also adding wild apples to our ciders, picked not far from family land.
Orchard on living soils, and responsible agriculture
Agriculture has an enormous impact on the environment. We work very hard to make sure that cultivation methods are as respectful as possible, leaving considerable room for biodiversity and relying on human labor.
Harvesting
Harvesting is done by hand, in the month of October.
Crushing and pressing
The apples are crushed and pressed right on our land.
Fermentation
After pressing, the native yeasts naturally present in the apples take charge of fermentation. Those yeasts give natural expression to our terroir and contribute to greater complexity in the ciders.
Bottling
All our ciders are dry. However, residual sugars are fermented by the yeasts once the cider is in the bottle. It’s during this phase that the ciders develop their effervescence. Foam taking in the bottle requires a minimum of two months.
Disgorging
Disgorging, a technique used primarily to remove the sediment from champagnes and sparkling wines, consists in inverting the bottles for a few days so that the sediment accumulates in the bottle neck. While in that upside-down position, each bottle has the cap removed and is then returned to its upright position in a fluid motion. The pressure in the bottle will expel the sediment in one shot. The amount of cider lost is adjusted for and the bottle is re-capped.
We practice disgorging on some of our ciders in order to create a more refined product, more translucent and homogenous from one glass to the next.
Preservation
Cider is alive, it evolves in the bottle. Our products will last for about two years. Keep the bottle upright, at around 15 °C.
